Ricotta Pancakes
Ingredients:
- 2 eggs
- 2 T. whole-milk ricotta cheese
- 1 tsp. Splenda or 1/8th tsp. Stevia
- 1 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
For topping:
- 1/4 c. sour cream
- 2 tsp. Splenda or 1/4th tsp. Stevia
- 2 T. water
- 1 T. dark chocolate cocoa shavings or 1/4 c. berries of your choice
Instructions:
- Spray skillet with nonstick spray.
- Mix eggs, ricotta, 1/8 teaspoon Stevia (preferred) or 1 tsp. Splenda, vanilla, cinnamon, and nutmeg together.
- Spoon into pan, cook until setting up and then flip, cooking until firm.
Topping:
- Mix Stevia or Splenda and 2 T. water with sour cream and serve over Ricotta pancakes.
Optional:
Top dark chocolate cocoa shavings or berries.
